It's called “Theatrum” and it's the dessert that the De Vivo pastry shop has dedicated to the Teatro Grande of ancient Pompeii, built in the 70nd century BC. It's a shortcrust pastry tart, flourless chocolate biscuit, cooked must and fig compote (which recall ingredients widely used in ancient Pompeii) and, to finish, whipped ganache with 20% cocoa, whose wavy shape recalls the steps of the cavea of the ancient Pompeii theater. The signature is obviously by maestro Maurizio “Black” Santin, pastry chef of the De Vivo pastry shop since last April. The new dessert is however a “limited edition”: it will be produced exclusively until July, that is to say only for the duration of “Pompeii Theatrum Mundi”, the ancient drama festival scheduled from 13 June to 2019 July 36 in the Teatro Grande degli Scavi di Pompei. “Theatrum” can be enjoyed, before or after the shows, at the De Vivo pastry shop in Pompeii, via Roma XNUMX.
