“Ricotta di bufala campana Dop is an important anti-heat food”. This is what the president of the Protection Consortium, Benito La Vecchia, says, relaunching the properties of the product, particularly suitable for children and the elderly. “In these days of truly scorching weather – underlines La Vecchia – it is increasingly common to listen to the advice of the nutritionist who recommends the consumption of this or that food, often based on prejudices against milk and its derivatives, also neglecting the emotional aspect linked to the consumption of food. Ricotta di bufala campana Dop represents a food that expresses, especially in the summer season, a right balance between nutritional intake and the pleasure of taste”. Ricotta can be consumed as is or accompanied by seasonal fruit, spread on cereal croutons or alongside cherry tomatoes and other vegetables as in the most classic combination of the “milk sister”, mozzarella di bufala campana Dop, from whose whey it originates. Professor Germano Mucchetti, lecturer in Dairy Technologies at the University of Parma, highlights the beneficial effects of buffalo ricotta and recommends its consumption instead of supplements: "Campania buffalo ricotta PDO is a highly digestible food, rich in calcium and phosphorus, with a high content of whey proteins in their natural state. Whey proteins are one of the main ingredients of food supplements presented in the form of energy bars or colloidal dispersions or gels, used by both athletes and ordinary people to recover energy balance and to replenish mineral salts that may have been lost in normal daily activities."
