Renowned Neapolitan pizza chef Gino Sorbillo has announced the creation of his latest creation: a “bianca” pizza with Neapolitan fiordilatte mozzarella, fresh basil, Amalfi PGI lemon juice, and steamed blue crab.
According to Sorbillo, this pizza is delicious and the blue crab is even tastier than traditional crab.
Sorbillo explained that there is a lot of controversy surrounding this species of crab, defined as “alien”, which has arrived in the Italian seas. So he decided to use it in the kitchen, trying to reduce the alarmism that has been created. He also launched an appeal to his pizza chef colleagues to use the “Martian crab”.
However, Sorbillo stressed that the use of this ingredient does not compromise the authenticity of typical Neapolitan products, such as pizza Margherita or pizza Marinara. He stated that products not necessarily tied to the territory are already used, such as French cheeses, anchovies from Northern Europe and Speck from Alto Adige. According to the pizza chef, it is simply a matter of offering a greater variety of options.
The new blue crab pizza is already available in the historic location on Via Tribunali in Naples, but will soon be sold in other Sorbillo restaurants.
