The Finnish Kaffeost 

The "Coffee” is a Finnish tradition that combine coffee and cheese, especially popular in the northern and rural regions of Finland.

Kaffeost is a combination of fresh coffee and small pieces of cheese. The cheese traditionally used for this recipe is called “leipäjuusto” in Finnish, also known as “juustoleipä” or “bread cheese” in English. This type of cheese is often made from reindeer or cow’s milk and has a firm, slightly chewy texture. It is often cooked in a pan or in the oven before being cut into cubes.

Here How to prepare Kaffeost:

  • The cheese is cut into small cubes or slices.
  • The cheese cubes are placed at the bottom of a cup or bowl.
  • Hot coffee is poured over the cheese, so that the cheese cubes soak in the coffee.
  • While the coffee is being consumed, the cheese cubes are eaten at the same time or after drinking the coffee.

This recipe creates an interesting contrast between the flavor of the coffee and the unique texture and flavor of the leipäjuusto cheese. Coffee in Senegal has a unique and very popular variant called “Cafe Touba” This drink takes its name from the city ​​of Touba, which is an important religious center in Senegal.

Café Touba is a coffee flavored drink that combines coffee and spices, in particular roasted coffee beans and the “djar” or “grains de selim,” a local spice also known as “Selim grains” or “Xylopia aethiopica.” These Selim grains have a slightly spicy and aromatic flavour, which gives the drink a unique taste.

Ingredients:

  • 1 cup of strong espresso coffee
  • 1-2 teaspoons brown sugar (or to taste)
  • 1-2 teaspoons unsweetened cocoa powder
  • 30 ml of cachaça (a Brazilian sugar cane distillate) or coffee liqueur
  • Whipped cream (optional)
  • Chocolate chips (optional)

Procedure:

  • Make a strong espresso, preferably using high-quality coffee. You can use an espresso machine or a moka pot.
  • Pour the espresso into the cup.
  • Add 1-2 teaspoons of brown sugar or adjust the amount according to your personal taste.
  • Also add 1-2 teaspoons of unsweetened cocoa powder to add a hint of chocolate to your coffee.
  • Gently heat the cachaça in a small saucepan without boiling it. If you prefer, you can use a coffee liqueur instead of cachaça.
  • Pour the hot cachaça into the coffee and mix the ingredients well.
  • If you like, you can add whipped cream on top of the coffee to enrich the flavor and texture.
  • If you want to make your Brazilian Coffee even more inviting, you can garnish with some chocolate chips on top of the whipped cream.

Thai Coffee: Thai Eiskaffee

La Thailand is a coffee producing country, especially Robusta, which is mainly intended for export and from which soluble coffee is obtained. This production is very recent; in fact, this crop was introduced and encouraged by King Bhumibol Adulyadej, in the 70s of the 900th century, to replace the cultivation of opium.

The "Thai Ice Cream” much loved in Thailand is a cold coffee-based drink. It is a variant of the iced coffee, but with a Thai touch thanks to the addition of sweetened condensed milk. This is a delicious and refreshing drink, perfect for hot days or when you want something different from your traditional iced coffee. 

Here's how to make a Thai Eiskaffee:

Ingredients:

  • Strong espresso (2 shots)
  • 2-3 teaspoons brown sugar (to taste)
  • 2-3 tablespoons sweetened condensed milk
  • Ice
  • Milk (optional)
  • Whipped cream (optional)
  • Chocolate chips or cocoa powder (optional)

Procedure:

  • Make strong coffee using an espresso machine or a moka pot.
  • Add 2-3 teaspoons of brown sugar to the hot coffee and stir until the sugar dissolves completely. You can adjust the amount of sugar according to your personal taste.
  • Let the sweetened coffee cool to room temperature.
  • Once cooled, place the coffee in the refrigerator to cool further.
  • Take a tall glass and fill it with ice.
  • Pour the sweetened cold coffee over the ice.
  • Add 2-3 tablespoons of sweetened condensed milk to the coffee. The condensed milk will add sweetness and creamy texture to the drink.
  • If you prefer a smoother taste, you can add a little regular milk to the drink.
  • Mix all the ingredients well in the glass until you get a smooth mixture.
  • If you like, you can garnish the top of the Thai Eiskaffee with whipped cream and chocolate shavings or a dusting of cocoa powder.
