Naples triumphs at Identità Golose, Marco Ambrosino best chef of the year

After the success in the Gambero Rosso Guide 2025 for the best Pre-dessert,
the chef of Sustànza is rewarded for his commitment to the recovery of Mediterranean traditions and for the full maturity achieved

Marco Ambrosino, chef of the restaurant Sustànza in Napoli, is the Best Chef of the Year according to the "Identità Golose" Guide to Restaurants in Italy, Europe, and the World. This important recognition comes as the culmination of the extensive research and cultural exploration that the Procida-born chef has been carrying out for a year and a half at the Galleria Principe di Napoli.

"We're awarding him for the strong identity he expresses in every detail, especially the menu. A passionate journey through Mediterranean traditions, free from stereotypes." These are the reasons that prompted the Identità Golose staff to award the chef the prize.

According to the creator and curator of Identità Golose Paolo Marchi, at Sustànza the chef has reached his full maturity, thanks to an environment capable of allowing him to express all his potential.It is an extraordinary achievement that rewards our work, not only from Sustànza, but throughout the entire ScottoJonno project”, the literary café space that hosts the restaurant and which is becoming a true cult place in Naples as a meeting place for intellectuals and tourists, and the venue for dozens of book presentations and cultural events

“A special thanks goes to Identità Golose and to the owners of cotto Jonno e Sustànza, in the person of Luca Iannuzzi, for believing in and supporting my projects, and to the entire dining room and kitchen brigade for the experience that we build together every day” says Marco Ambrosino proudly.

"However, I don't want to be the only protagonist. Behind every dish there's a story, a cultural inspiration, which often coincides with those of the projects I'm personally involved in, like the Mediterranean Collective. Opportunities like these are crucial for putting certain issues under the spotlight.".
