Italian street food between tradition and innovation
The sector is constantly evolving, driven by the quality fast food boom, from the increase of food truck and by the growing demand for culinary authenticity. As he points out Pina Sozio, curator of the guide: “Street food still offers genuine experiences. Alongside historic venues, we find increasingly rich international offerings, with a growing offering of Middle Eastern cuisines”.
A phenomenon that confirms how the street food is now a global tourist driver, capable of combining tradition and innovation, always in the name of taste.

It's a great result for PasteNa, but I wonder if all these new entries are really up to expectations. Competition is growing and it could be difficult to maintain quality over time.
