Palinuro overlooks the Tyrrhenian Sea with a skyline of promontories, coves, and limestone cliffs shaped by the water. The cape, jutting out into the sea, guides the gaze along a coastline where the light changes rapidly: clear in the midday hours, more golden at sunset, almost metallic when the wind ripples the surface. Sea caves, natural arches, and coves accessible by sea create a backdrop perfectly suited to a simple dish like fried paranza (fish).

The connection, in this case, is above all evocative. It's not a question of attributing the exclusive origin of this dish, widespread along many Italian coasts, to Palinuro, but of recognizing a sensorial harmony: small fish, flour, hot oil, and a measured flavor seem to belong to the same landscape of rocks, saltiness, and small boats. In coastal Cilento, this simplicity finds a natural setting, linked to the maritime culture and the variable availability of fish.

The mixed fish fry was born from the idea of ​​showcasing small fish, often different in shape, texture, and cooking time. Its character doesn't depend on a fixed composition: the choice varies according to the season, sea conditions, and availability. Anchovies, red mullet, cod, silverside, sole, and small horse mackerel can be included in the mix, as long as they are fresh and suitable for frying.

In Palinuro, this dish can be imagined alongside a simple table, with the sea in the background and a few additions that don't overwhelm the fish. Lemon, a staple in Campanian cuisine but used sparingly, adds acidity and aroma. A handful of parsley can accompany the dish, while salt should only be added at the end to keep the surface crispy.

The secret isn't to overload the preparation, but to follow three steps: dry the fish thoroughly, flour it without creating a thick layer, and maintain a stable oil temperature. When these elements are balanced, the fried fish remains light to the bite, with a thin crust and a moist interior, recognizable by its distinct seafood flavor.

How to prepare a crispy paranza

For four people, you'll need about 800 grams of mixed small fish, already gutted and cleaned. This can include anchovies, small red mullet, cod, sole, or other suitable species. You'll also need 150-200 grams of soft wheat flour, or a little rice flour for a drier coating, peanut oil or another suitable frying oil, salt, and a few lemon wedges for garnish.

  • Quickly wash the fish only if necessary, then dry it thoroughly with paper towels. Residual water lowers the temperature of the oil and encourages spattering.
  • Divide the catch by size. Smaller fish cook quickly, while slightly larger ones require a few more minutes.
  • Dredge the fish in the flour just before cooking, shaking it through a sieve to remove the excess. The breading should not become solid.
  • Heat plenty of oil to about 175-180 degrees. Fry a few pieces at a time, so the temperature doesn't drop and the fish doesn't absorb too much fat.
  • Cook until the surface is golden and crispy. Small fish often only need two or three minutes; larger pieces may require slightly longer.
  • Drain on a rack or paper towels, season immediately with salt, and serve uncovered to preserve the crispiness.

It's best not to mix fish of different sizes at the same time. A practical method is to fry the larger ones first, followed by the smaller ones, checking the color of the flour each time. The oil must remain clean: burnt residue alters the flavor and makes the surface bitter.

Fried mixed fish doesn't require elaborate sauces. Lemon can be served, but squeezed only at the last minute and directly onto each serving, as the acidity quickly softens the crust. Even the side dish should be modest: a crisp salad, some seasonal vegetables, or simply homemade bread.

The flavor of the dish complements a landscape that invites you to observe every detail: the pale rock of the promontory, the green of the Mediterranean scrub, the deep blue beyond the inlets. The Palinuro experience isn't limited to the sea view, but also encompasses the meticulous selection of its ingredients and a cuisine that leaves everything it brings to the table instantly recognizable.

A fried fish dish, ideally eaten near the coast, unhurried and with the salty scent in the air, conveys precisely this impression. The fish remains the protagonist, while the oil and flour merely serve to protect it. When the sun sets behind the Cape and the cave walls change color, the paranza finds its most natural setting: not a promise of origin, but a credible encounter between sea, simplicity, and the Mediterranean.
