Gragnano. The winner of the Top Italian Food 2022 award during the last event organized by Gambero Rosso were the paccheri from Pastificio Faella. An important recognition for Pastificio Faella, one of the oldest in the world thanks to the artisan work passed down from generation to generation by the Faella family. Since 2013, Pastificio Faella pasta has also been IGP (Protected Geographical Indication), indicating the unique characteristics of the pasta prepared in Gragnano.
To produce its delicious paccheri, Pastificio Faella chooses durum wheat from Molino Casillo for the dough and then uses a bronze drawing process to produce a pasta that is porous on the outside and rough on the inside. In this way, Pastificio Faella's paccheri are ready for drying, which occurs slowly over a few days.
At the end you get the best paccheri in the world with all their aroma, their al dente consistency, ready to capture the most varied sauces.
As indicated by Gambero Rosso:
“The paccheri, produced with durum wheat semolina from Molino Casillo (Selezione) and dried around 50 ° C, are excellent. Regular cut and very handcrafted look, with a matte surface, porous on the outside and rough on the inside. The strong points are the aroma, which is fully captured during and after cooking, and the flavor. The growth of the format during cooking is excellent. Al dente consistency in the times indicated on the package ".
An acknowledgement not only for the historic company of Gragnano, but which represents an important element for the quality of Italian food in the world.
