In the suggestive setting of the ancient stables of the , in the province of Benevento, opens Doremì, a fine dining restaurant that promises a unique culinary experience. This new gastronomic jewel, conceived as a kingdom of delights, is led by chef Giacomo Ignelzi, known for his ability to blend tradition and modern techniques.

Ignelzi's path is a journey through Italian culinary excellence. After honing his skills in Milan and , the chef has decided to return to his roots in BeneventoHis career includes over ten years alongside Paolo Barrale at the Michelin-starred Marennà restaurant and five years as executive chef at “J Japanese Contemporary” in Naples, where he also oversaw the Portici and Sorrento locations.

Since April 2024, Giacomo Ignelzi has embraced the Sgueglia family's project, with whom he has a strong bond of friendship and respect. Today, as executive chef of Castello di Limatola, he leads Doremì with passion and mastery. The restaurant's name is a tribute to the horse that lived in the castle's stables in 1700, when the fiefdom was owned by the Gambacorta dukes. In the restaurant's hall, a personal bowl found in the mangers recalls the presence of the animal, keeping a piece of history alive.

Doremì's cuisine celebrates the Campania tradition, combining local flavors with continuous gastronomic research. Among the proposals, the tasting of Gin Orchestra Naturae stands out, created by the musical maestro Peppe Vessicchio together with Tonio Sgueglia. This gin is a tribute to the aromas of Cilento, infused with carob, red juniper, lemons from the coast, unripe mandarin, myrtle and fennel seaweed, symbolic ingredients of the Mediterranean diet.

“Everything around us, visible or invisible, acts and interacts through a specific exchange of waves,” explains Vessicchio. “I like to think that we are immersed in the greatest Orchestra that exists, that of Nature. It is to this superior harmony that Tonio Sgueglia and I wanted to dedicate our gin, inspired by the moods of Cilento, in particular the charm of the Rocca Cilento Castle.”
